Where restaurant staff turnover really costs you
The learning curve. A new waiter serves fewer tables, makes more mistakes and sells less for the first few weeks. Every table they serve slowly costs you revenue.
Supervisor time. Someone has to show them the ropes, usually your best person during your busiest shift.
Waste and errors. Wrong orders, incorrect portions and breakages are highest when a team is new.
Guest experience. A guest who meets an untrained waiter often does not complain. They simply do not come back.
The knock-on effect. When good staff keep training new people, they burn out and leave too.
Why traditional training can’t keep up
Classroom training days assume people stay long enough to be worth the investment. In a sector with high turnover, by the time the next training day comes round, half the team has changed. On-the-job training fills the gap, but it varies with whoever is on shift.

The answer is not more training. It is training that starts on day one and fits around shifts. Short modules on a phone let a new starter learn the basics of service, hygiene and safety in their first week, without taking a supervisor off the floor.

Training is also part of your duty of care. Under the Occupational Health and Safety Act, employers must make sure staff know how to work safely, and the Department of Employment and Labour can ask for proof. A certificate on file for every employee is simple evidence that you took that duty seriously.
